Mincemeat Cheesecake
Dec. 25th, 2014 07:59 pmI improvised cheesecake and it was really good, so I'm writing it down as best I remember.
First I took a shop bought digestive biscuit base because I am the kind of crazy middle class person who does that now. Then I spread mincemeat in the bottom (I use the Delia recipe, see earlier comment). For the topping, mash a tub (the 250g ones) of Philadelphia (other cream cheeses are available) with a cup or so of sugar, stir in some extra thick cream and an egg yolk. Whisk an egg white with the juice of a lemon and more sugar, and fold that in too. Spread the lot over the top of the mincemeat and shove it in the oven (150degC) for half an hour or so.
