Last Night's Dinner

Last night's dinner was fried chicken, mushrooms and bacon with leeks sauteed in butter and glazed root vegetables.
Chop your veg (I used potatoes, parsnips, carrots and sweet potatoes, and it worked best on the sweet potatoes). Parboil.
Melt some butter in a roasting tin, and add some brown sugar and a splash of white wine vinegar. Add the veg and some dried sage (or herb of choice) and mix to coat. Put in the oven on gas mark 7 or 8 for about half an hour (I did twenty minutes and tht wasn't enough)
For pudding, we had peach croustade from the Godd Housekeeping Cookery Club Desserts book. A fairly simple pie - peaches cooked in brandy and sugar, and then baked in a filo crust. It was.. interesting. I'm not sure I'll make it again.
