I made bagels.

It was fun. I forgot the extract of malt in the poaching-water, though. I hope they taste OK!

(I have a UK recipe, so none of the US ingredients that are hard to find, and extract of malt instead.)

Now I'm curious: what ingredients are in the American recipes that are hard to find? The only thing I can think of is molasses, which is virtually identical to treacle.
