Long a firm believer that the only truly acceptable way to serve courgettes is fried in butter, I have recently been converted to their use in larger dishes (soup, ratatouille, mixed roast mediterranean veg (B's preference)) and also as fritters. THe word fritters is probably a misnomer; I refer to merely mixing flour with salt and lots of pepper, dipping in the courgett slices and frying.
