I was clearing out my inbox and came across several requests for my sticky toffee pudding recipe

So here it is. Enjoy.

Ingredients for pudding
2oz butter
6oz sugar
2 eggs
6oz chopped dates
205g evaporated milk
1tsp bicarbonate of soda
6oz self raising flour
1/2 tsp vanilla essence

Ingredients for sauce
4-5 oz soft brown sugar
205g evaporated milk
2 oz butter


Method
Beat butter and sugar together and add eggs Put dates, evap milk and 1/4 pint of water in a large pan, and bring to the boil. Remove from heat, stir in bicarb of soda. Fold flour into the butter mixture, and add to pan. Stir in vanilla essence. Transfer to an oven proof dish, and bake at gas mark 4 for about 40 minutes.

For sauce, boil all ingredients together, stirring constantly, for 2-5 minutes, or until it starts to thicken.

The best thing about this recipe is, if you cook the sauce until it's really thick, then let it cool down, you have a really nice butterscotch spread.

When you say "add eggs", do you mean to just chuck them in, or do you mean some sort of gradual addition with much beating, as with cakes?
