Oat balls

Yesterday I made oatballs which were well recieved. I made vegan ones before, but couldn't find the recipe.

First beat two eggs, then add enough oats that it's stiffish. Add the same amount of grated cheese, and a packet of cupasoup (I actually used a pack of ranch dressing bought on holiday, but any cupasoup should be fine). Stir well, then add enough oats it's malleable. Make balls, put in the bottom of a frying pan and add veg stock to cover. Cook for as long as your rice/pasta/whatever takes.

Yesterday, I removed the balls and added a pack of salsa to the stock, which worked as a sauce.

It sounds a bit like cheesejacks, although those are more like a savoury snack than a meal

Cheesejacks! Wow. For year's I've been searching for anything a bit like a savoury cereal bar, and it turns out that's what I should have been Googling.

Tried this last night, but I don't think it really worked. They turned out like lumps of congealed porridge, and didn't taste of much - I couldn't detect the cheese in them. We had them with roast veg - I think having them with pasta would be just starch+starch. Maybe I got the quantities wrong.

Maybe I did use more cheese than I thought. I'm not good at measuringmeasuring, but it looked to double the volume at that point. Ours tasted quite cheeseycheesey and savoury, but again that could be the type of cheese or the ranch.

Oh, I see what I did wrong! I said "same amount of cheese" but I meant "add cheese until you have double the volume if eggs+oats" and it reads more as "add the same amount of cheese as oats"

Yeah, that's right, although I'm not sure it'd make that much difference, as the egg just coats the oats and doesn't add much volume, BICBW.
